A still-shaken Carol Parker expressed thanks to the entire Cache Valley community for help during and after a fire that destroyed vendor booths at the Franklin County fairgrounds on Aug. 17.
Carol and her husband, Carl, were using three of the four booths that were occupied that Wednesday morning. The fourth was “home” to Jenny’s East Indian Cooking. Jenny Gregersen has been at the fair for the past three years.
Parker, who is also manager for the Franklin County Senior Citizens Center, has been a fixture at the fair for at least 15 years, cooking scones and Navajo tacos. A portion of her sales benefit the Senior Center.
This week she was composed enough to take a break from her regular duties at the Senior Center to sit down and talk about the traumatic event. (See the full story in The Preston Citizen.)
